Copycat Haldiram's Kaju Mixture Recipe
Delicious Kaju Namkeen!

Ingredients
- 300grams Poha
- 300grams peeled groundnuts
- 100grams Cashew nuts
- 100grams Almonds
- 50grams raisins
- 50grams coconut cut in small pieces
- oil for frying
- 3/4tsp Salt
- 1/2tsp Black salt
- 20 black peppercorns
- 1/2tsp Cumin seeds
- 1pinch Asafoetida
- 1/2tsp amchoor
- 1tsp coriander powder
- 1/4tsp red chilli powder
Instructions
- Heat the oil for frying.
- Fry the poha in two parts and drain excess oil.
- Split cashews in halves and fry them as well.
- Next fry the almonds and ground nuts.
- Shallow fry the coconut in a pan and drain excess oil from all the fried ingredients.
- Let the fried ingredients cool down and then put them in a mixing bowl.
- Heat oil in a tempering pan and fry the black pepper, cumin seeds and asafoetida till they release their aromas.
- Add black salt, regular salt, amchur, red chilli powder and mix in with the tempering.
- Cool down the tempering and the grind to make a powder.
- Mix the powder with the fried ingredients till well combined and then store the namkeen in an air-tight jar till later use.
